This recipe, base on one by Geraldime Holt, is a tasty change from the more traditional vinaigrettes to accompany welcome spring arrivals.
Salt and pepper
1 tsp. Dijon mustard
1tsp. white wine vinegar
4 tbsp. olive oil
2 tbsp. crème fraiche

1. Add a pinch of salt and pepper to a mixing bowl
2. Mix in mustard and vinegar
3. Add oil gently - stirring to emulsify
4. Fold in the crème
5. Taste for seasoning.
