Serves 4
Tasty accompaniment to pretty much anything.
450 g/ 1 lb. courgettes
Salt and pepper
1 tbsp olive oil
1 tbsp chopped parsley
1 glove garlic - finely chopped
1. Top and tail courgettes. pell them and leaving stripes of green. Cut
to Index finger thickness. Lightly salt them. Leave a good hour in a
colander/sieve so they lose their liquid. Shake them well and dry with
kitchen paper.
2. Heat the oik in large flying pan. Fly hte round over high heat so
they color lightly. Turn over a pair of tongs or a spatula (depending on
the amount of rounds, you may have to repeat this).
3. Grind over a lot of pepper. Throw them over parsley and garlic. Toss
well. Turn down the heat to low, cover and cook for a few more minutes,
being careful not to over cook them.

Herbs used in the treatment and prevention of dementia(682)(683) in traditional medicine, may be due to their effectiveness of phytochemicals in attenuation of oxidative stress and neuro inflammation via neuroglial activation(683).
According to University of Wollongong, herbs and spices, containing high amount of phytochemicals in traditional history of use, with strong roles in cultural heritage, may have a distinguished effect in cognitive decline associated with ageing and the acute effects of psychological and cognitive function(684), probably through active ingredients of spices in modulation of neural response in the peripheral nervous system, via interaction with TRP channel/receptors(685).
Phytochemicals have been studied intensively including
1. Cannabinoids (e.g. cannabidiol) from Cannabis sativa, may be emerging as potential therapeutic agents for treatment of symptoms of dementia(686)(687). In Alzheimer's disease. the phytochemicals have found effectively against multifactorial illnesses as Alzheimer's disease, through inhibition of BuChE(689) and AChE(690) enzymes by a non-competitive or mixed mechanism(688).
2. Resveratrol (occurs in various plants) showed to improved cognition and reduces oxidative stress, by promoting learning and memory ability in vascular dementia(692) and decreased malonyldialdehyde levels(691). In Alzheimer's Disease, the phytochemical exerted its neuroprotective effect(694)(695), in decreased Aβ accumulation, tau protein phosphorylation, oxidative stress(693), and may be used for aging population in the prevention of various age-related neurological disorders(694).
3. Curcumin (from turmeric [Curcuma longa]), in pharmacological activities, besides promoted cognition and mood in a healthy older population(695), it also exhibited beneficial role in several neurodegenerative disorders(696) against administered streptozotocin (STZ)induced dementia model(696)(698), probably through its antioxidant effect(697). In Alzheimer's Disease, The herb also showed in reversed cognitive deficits, through its function in decreased GSK-3β levels(Glycogen synthase kinase 3, a protein) related to onset of Alzheimer's Disease(699)), and increased promoter activity of the TCF/LEF in binding DNA(600) and cyclin-D1(a protein) in regulating cell cycle progression(701).
4. Crocetin, a phytochemical found in Saffron (Crocus sativus), protected cerebrocortical and hippocampus neurons against ischemia, by improving spatial learning memory after chronic cerebral hypoperfusion in animal study(703) through its antioxidant effects(704) in decreased oxidative stress(704). According to The University of Tokyo, the effectiveness of the herbal phytochemicals crocetin and crocin, also enhanced learning behaviour and promoted memory recall(705). In severe Alzheimer's Disease and mild-to-moderate Alzheimer's disease patients, saffron extract showed to be comparable with memantine in reducing cognitive decline in 1 year(706) and reduce cognitive decline in 22 weeks administration(707), respectively.

5. Ginseng (Panax species), showed to be beneficiary on age-related cognitive impairments
through the activities of its members of ginsenosides(708) and Non-ginsenoside nicotinic agents(709).
6. Sage (Salvia species), may also be used as a potential novel natural treatments for the relief of some diseases including dementia, according to Shahid Beheshti University of Medical Sciences(710).
But according to Jodrell Laboratory, the use of such remedies in complex mixtures of different plants in traditional folk medicine may induce complication in interpretation of pharmacological activity and challenges for quality control(702).

Our English neighbour Julie Ide, herself an accomplished cook, put onto Pao;a Gavin. This is based on recipe in her excellent Italian vegetarian and it's very tasty.
2 tbsp olive oil
1 small onion, chopped
1 green savoy cabbage - quartered, cored and shredded
2 tbsp hot water
1 tbsp capers - chopped if large
250 g/ 8 oz. tinned tomatoes - put through a sieve
1 tbsp balsamic vinegar
salt and pepper
1. heat the oil in a large sauce pan and sweat the onion gently until opaque.
2. Add the cabbage and the water, and cook, covered for 10 minutes, stirring from time to time.
3. Stir in the capers, tomatoes puree and the balsamic vinegar. Season well and cook covered, until the cabbages are tender - about 30 minutes.

Musculoskeletal disorders (MSDs)
Musculoskeletal disorders (MSDs) is medical condition mostly caused by work related occupations and working environment, affecting patients’ muscles, joints, tendons, ligaments and nerves and developing over time.

Osteoarthritis
Osteoporosis is condition of thinning of bone and bone tissues as a result of the loss of bone density over a long period of time.
VI. Antioxidants and Osteoporosis
Dietary and endogenous antioxidants were consistently lower in patients with osteoporosis, according to University of Perugia, leading to decrease antioxidant defenses and promoting pathogenesis of osteoporosis(32).
2. Selenium plus vitamins E and C
In rabbits study, combination of vitamins E and C given partially prevented this bone tissue destruction on the progress of osteoporosis. When combine with sodium selenite given together with vitamins E and C to the osteoporosis model rabbits, the long bone tissue of osteoporosis rabbits had almost the same structure as in normal rabbits(33).
3. Vitamin C
According to the study epidemiologic studies, correlate low vitamin C intake and genetic deletion of enzymes involved in de novo vitamin C synthesis are associated to bone loss and severe osteoporosis, respectively(34).
4. Calcium and vitamin D
Calcium supplements showed to reduce the rate of bone loss in osteoporotic patients. According to SENECA study, calcium treatment not only on bone mass but also on fracture incidence and vitamin D insufficiency is frequent in elderly populations in Europe. Supplementations with daily doses of 400-800 IU of vitamin D, given alone or in combination with calcium, are able to reverse vitamin D insufficiency, to prevent bone loss and to improve bone density in the elderly, according to University of Siena(35)

What to do with Brussels sprouts? this tasty option and quickly done. I favor the small ones, they are sweeter.
15 g/ 1/2 oz. butter
1 tbsp olive oil
3 shallots - peeled and sliced
450 g/ 1 lb. Brussels sprouts outer leaves removed and halve
3 tbsp vegetable stock
salt and pepper
1. Melted the butter with the oil in medium frying pan and gently sweat the shallots until soft.
2. Add halved Brussels and turn with the shallots.
3. Cook for a couple minutes before adding stock. Turn again and season.
4. Cover and cook on a low heat until Brussels are tender but not mushy. You want to retain some of their lovely green color.

Its natural products (galantamine and rivastigmine), also has been used pharmaceutically for cognitive and behavioural and psychological symptoms of dementia (BPSD)(673).

In olfactory bulbectomized mice, alcoholic extract of Bacopa monnieri (L.) showed to ameliorate memory and emotional deficits(678) and enhanced cognitive performance(679) through its protection of cholinergic systems from OBX-induced neuronal damage(677). In normal healthy participants, the herb also attenuated stress reactivity and mood, through its adaptogenic and nootropic effects, probably via reduction in cortisol levels(680). According to National College of Natural Medicine, standardized dry extract of Bacopa monnieri, promoted the improvement depression scores, combined state plus trait anxiety scores,with few adverse events, primarily stomach(681)

If they are very young you don't have to skin them - and of course, you can use frozen. You could serve this with some tasty chevre and olive oiled toast on the side as a starter or if you add a green salad, you have lunch!

100 g/ 4oz. sticky bacon - diced
2 small shallots - finely chopped
2 Kg / 4-1/2 lb. broad bean - shelled and skinned - an idea task for guests who want to help
salt and pepper
1. heat the oil on the medium pan. gently fry the bacon, coloring it lightly.
2. Add the shallots and soften.
Add the brilliant green broad beans and 2 or 3 tablespoons of water. Season, remembering that bacon may be salty.
4. Cover the pan and cook for 5 - 7 minutes;p depending to the age of the beans, they should be just tender.
