Hot Chili Cheese Dip

From Quick and easy family favorites by Vickie and JoAnn

Be sure to know this hearty dip on your menu the next time family & friends are over to watch the big game..... it will be a hit.
1 lb. mild or spicy ground pork sausage, browned and drained
2 (103/4-oz. cans nacho cheese soup
15-oz. can chili with beans
141/2 oz. can tomatoes with chiles
16-oz. pkg. pasteurized process cheese spread, cubed
Combine all ingredients except cheese in a large saucepan over medium heat; cook until bubbly. Add cheese. Reduced heat; cook and stir until cheese is completely melted.
Make 6 to 7 cups.

Cervical cancer in Vitamin B2 Points of View

 According to the American Cancer Society's, in 2014, 12,360 new cases of invasive cervical cancer will be diagnosed with the death of  4,020 patients. The risk of cervical cancer is higher in Hispanic women followed by African-Americans, Asians and Pacific Islanders, and whites(a).

Vitamin B2 also known as  Riboflavin, is a water-soluble, yellow-orange organic compound found abundantly in milk, meat, eggs, nuts, enriched flour, green vegetables, etc. The vitamin is essential for normal cellular growth and function and best known for converting energy from protein, fat, and carbohydrates during metabolism and its antioxidant effects in oxidation-reduction reactions.

Epidemiological studies, linking vitamin B2 in reduced risk and treatment of cervical cancer have been inclusive(a)(b)(c)(d). Suggestion of serum homocysteine was strongly and significantly predictive of invasive cervical cancer risk. In the study of cervical cancer risk factors through at-home interview and blood drawn at least 6 months after completion of cancer treatment from 51% and 68% of interviewed cases and controls, suggested that elevated serum homocysteine increased risk of cervical cancer are associated to the inadequacy of folate, B12 and/or B6, or genetic polymorphisms affecting one-carbon metabolism(1)(2). Other researchers indicated that deficiencies in dietary B-vitamin input and genetic polymorphisms for the enzymes in one-carbon metabolism are associated with a host of human health concerns,including cancer(3). Vitamin B2 deficiency may lead to with cervical cancer and precancerous lesions. Researchers at the the First Affiliated Hospital of Xinjiang Medical University, found that the inverse association  between tissue riboflavin levels and C20orf54 mRNA and protein expression in cervical squamous cell carcinoma (CSCC)(4), serum and tissues of vitamin B2 may be linked to the risk of the cervical cancer development. In the methylenetetrahydrofolate reductase (MTHFR) gene, the 1University of Alabama at Birmingham, Birmingham showed that women who have the MTHFR polymorphism and low riboflavin status, were less likely to develop cervical intraepithelial neoplasia (CIN) 2 or 3, than women who was without the polymorphism and high riboflavin status(5). In the analysis of the cancer site, MTHFR C677T polymorphism interacted with folate and riboflavin in modulating cancer risk in a manner, depending to the types of cancer but  the effect on cervical cancer risk is not clear(6).

Taking altogether, Vitamin B2 deficiency and defection of methylenetetrahydrofolate reductase (MTHFR) gene may be associated to increased risk of cervical cancer, but further studies are necessary to validate its claims. At the mean time, please make sure you follow the guideline of the Institute of Medicine of the National Academies as  over doses for a prolong period may cause symptoms of skin rashes, hypersensitivity, high blood pressure etc.,

Button mushroom and Cardiovascular disease (CVD)

Scientists may have found one of the natural food used in many different cultures with a potential in reduced risk and protected against CVD.

Strong evidences through epidemiological studies suggested that regular consumption of fruits and vegetables is strongly associated with a reduced risk of cardiovascular disease (CVD)(7)(8)(9). Dietary fungi, such as, mushrooms, can protect against chronic disease by altering inflammatory environments through inhibition of cellular processes under pro-inflammatory conditions which are associated with CVD(2)(3).

According to Dr. Martin KR., ergothioneine (ERT), a novel antioxidant, presented in edible mushrooms, accumulated through diet was found effective in interrupted pro-inflammatory induction of adhesion molecule expression associated with atherogenesis(1).

Mushroom, a standard name of white button mushroom, the fleshy, spore-bearing fruiting body of a fungus produced above ground on soil or on its food source, contains several important nutrients including Thiamine (Vitamin B1), Riboflavin (Vitamin B2), Niacin (Vitamin B3), Pantothenic acid (Vitamin B5),  Calcium, Phosphorus, Potassium, Sodium, Selenium, Iron, Copper and Zinc which are necessary to maintain the growth, body functions as well as protected against chronic diseases.

Its antioxidants such as Astraodorol, Psilocybin, Lectin, adustin, ribonuclease, nicotine, etc. may also consist the magic power in reduced risk and treatment of vary types of cancer, including colon(4), breast and gastric cancers(5) through inhibition of cell cycle arrest, significant suppression of  cellular proliferation, in tested cancer cell lines.

These findings showed to support the notion of dietary mushrooms in protection of CVD, but multi canters and large sample size studies to identify the main ingredients comparable to current medicine used are necessary to improve its validation.

But, the study of University of Gdańsk, in the reviews and updates data on macro and trace elements and radionuclides in edible wild-grown and cultivated mushrooms suggested that the coexistence of
minerals of nutritional value collected from natural habitats, and co-occurrence with some hazardous elements including Cd, Pb, Hg, Ag, As, and radionuclides should be taken certain precautions(6).

Spiced chili nuts and seeds

 From Fresh and Easy Meals by Better Homes and Gardens

Pick your favorite nuts and seed for this snack recipe. Orange juice concentration spiked with piquant spices gives the mixture a burst of favor.

Prep. 10 minutes
Bake 15 minutes
Oven 300 degrees F
Make 16 (1/4 cup) serving

2 tsp. frozen orange juice concentrate thawed.
2 tsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. cayenne pepper
1/4 tsp. salt
1/4 tsp. ground allspice
1.4 tsp. onion salt
2 cups unsalted peanuts, hazelnuts, and/or Brazil nuts
1 cup pecan halves
6 tsp. unsalted shelled sunflower seeds
2 tsp. sesame seeds
Non stick cooking tray

In a large bowl, combined orange juice concentrate, Worcestershire sauce, garlic powder, cumin, chili powder, cayenne pepper,salt, allspice, black pepper and onion salt. Stir in nuts and seeds; toss to coat.
Line a 15x10x1 inch baking pan with foil; slightly coat with nonstick cooking spray. Spread nuts and seed on foil. Bake in a300 degrees oven for 15 to 20 minutes or until toasted, stirring once. Cool. Store in an airtight container at room temperature for up to 1 week.

Nutrition facts per serving: 186Cal, 16 g total fat(2 g sat. fat), 0mg cholesterol, 59 sodium, 7 g carbo, 3 g fiber, 6 g pro.
daily value: 2% vitamin A, 6% vitamin C, 2% calcium, 5% iron.

Cervical cancer in Vitamin K Points of View

According to the American Cancer Society's, in 2014, 12,360 new cases of invasive cervical cancer will be diagnosed with the death of  4,020 patients. The risk of cervical cancer is higher in Hispanic women followed by African-Americans, Asians and Pacific Islanders, and whites(1).
Vitamin K(K1, phylloquinone; K2, menaquinones), is a fat soluble vitamin, found abundantly in leafy green vegetables, broccoli, and Brussels sprouts, etc. It is best known for promotion of coagulation and bone health.

Vitamin K3 (2-methyl-1,4-naphthoquinone), also known as menadione, was found effectively in inhibition of the proliferation of human cervical epithelial cancer cells (HeLa), through binding of tubulin, a small family of globular proteins, including α-tubulin and β-tubulin possible with function of cell division and the movement of materials within cells(1)(2). Other synthetic vitamin K analogue, 2-(2-mercaptoethanol)-3-methyl-1,4-naphthoquinone or compound 5 (Cpd 5) also was found effectively inhibited tumors through arrested cell cycle progression at both G1 and G2-M(3). In cervical carcinoma SiHa cells, Vitamin K3 (VK3)exerted its anti proliferative effects through inhibited cyclin expression via cell cycle arrest and transition of the aphidicolin-synchronised SiHa cells(4)and induced cytotoxicity in human cervical-carcinoma tsgh8302 cells, through exhibited chromatin condensation and DNA fragmentation(5).

Taken altogether, synthetic Vitamin K and its analogue have shown to reduced risk of and treatment of cervical cancer through cell cycle arrest and regulation of cancer cell proliferation. Further studies with large sample size and multi center studies to validate the effectiveness are necessary. Overdoses can induce symptoms of Skin rash,  Diarrhea, Nausea, Vomiting, Anemia, etc. Please make sure you follow the guideline of the Institute of Medicine of the National Academies.

Salad recipe- Creamy Caesar

Creamy Caesar(Company Coming salads  by Jean Pare)
Caesar dressing
1 garlic clove
1 large egg(or 2 small)
1 tsp.(5 ml) Worcestershire sauces
2 tbsp. (30ml) lemon juice
2 tsp. (10ml) Anchovy paste
Pepper just a dash
1 cup (250ml) cooking oil

Croutons
1 garlic clove. sliced
2 tbsp. (30ml) butter or margarine
4-5 white bread slices, cubed

Salad
1 large head Romaine lettuce
2 cups (500ml) Croutons

8 bacon slices
Cooked and crumbled
Grated Parmesan cheese

Caesar dressing: Put first 6 ingredients into blender. Blend until smooth. With blender running adding cooking oil in a slow stream. Chill about 2 hours.
Crouton: Saute garlic in butter for 2 to 3 minutes. Remove garlic and discard. Add bread cubes. fry until golden, stirring often. remove. Cool
Salad: tear lettuce into bite size pieces in a salad bowl. Add croutons and dressing. Toss to coat.
Sprinkle with bacon and cheese. Serve 6.

Button Mushroom and colon cancer
Bowel cancer also known as colorectal cancer, is defined as a condition of the abnormal proliferation of cells in the colon, rectum, or vermiform appendix. It is the third most commonly diagnosed cancer in developed countries, including US and Canada.
A. bisporus showed to inhibit colon cancer cell line through positively increased GPx-1 and GPx-2 gene expression and GPx-1 enzyme activity in rat colon, due to the presented selenium(1). the Methodist Research Institute, Indianapolis study showed a positive effect of A. bisporus in inhibition of colon cancer (HT-29, HCT-116) cells, through cell cycle arrest at G0/G1 phase(2) and reversibly inhibits cell proliferation occurred within 30 min of the lectin being bound to the cell surface(3).
