The Quick and Healthy recipe: Sweet pepper crostini

Easy and versatile recipe are the best friend of any cook. This recipe comes together quickly and can be served hot or cold. Goat cheese and fresh basil add a special touch.
Olive oil  1tbsp.  15mL
Thinly sliced red pepper  11/2 cups  375 mL
Thinly sliced yellow pepper  1/12 cup  375mL
Garlic cloves, thinly sliced  3   3
Salt sprinkle
Pepper, sprinkle
Whole wheat baguette bread slices, cut diagonally 1/4 inch (6mm) thick  18    18
Goat (Chevre) cheese, cut up  3Oz.  85g
Finely shredded basil  2tbsp.  30mL
Heat olive oil in large frying pan on medium. Add next 5 ingredients. Cook to about 15 minutes, stirring occasionally, until peppers are softened.
Arrange bread slices on ungreased baking sheet. Broil on top rack in oven for about 1 minute per side until golden.

Papaya and Diabetes


 People with Type II Diabetes may be thinking to add whole food papaya into their diet. the recent study suggested(1) ,
The finding not only showed the effectiveness of unripe pawpaw fruit (Carica papaya) in inhibition α-amylase, α-glucosidase, but also induced lipid peroxidation in a dose-dependent manner, in rat pancreas(1).
The key enzymes of α-amylase, α-glucosidase, involved in the digestion of carbohydrates, have been linked to onset of type 2 diabetes. Inhibition of these enzymes can significantly reduce the post-prandial increase of blood glucose and have been considered by therapists in use for management of blood glucose level in type 2 diabetic and borderline patients(2).

In streptozotocin-induced diabetic rats study, the aqueous extract of leaves of C. papaya administered strongly controlled blood glucose levels(3), through prevention of hepatocyte disruption, as well as accumulation of glycogen and lipids via its hypoglycemic and antioxidant effect(4)

Diabetes is defined as a condition caused by insufficient insulin entering the bloodstream to regulate the glucose. It is either caused by cells in pancreas dying off or receptor sites clogged up by fat and cholesterol. In some cases, diabetes is also caused by allergic reactions of cells in the immune system.

In a new study, conducted by the researchers at the Davis Heart and Lung Research Institute, fermented papaya preparation was tested whether it improves dermal wound healing outcomes in adult diabetic mice by preventing the  risk of infections(5).
The result was astonishing, the fermentation not only up regulated the Sp1 DNA binding activity(modulating the cellular response to DNA damage) in Peripheral blood mononuclear cells (PBMC) but also the protein and mRNA expression of Rac2(regulates a number of cellular functions)(5).

A randomized controlled clinical trial conducted at the Cardiac Centre, ANDI Centre of Excellence for Biomedical and Biomaterials Research and Department of Biosciences University of Mauritius, showed that oral administration of 6g FPP®/day for a period of 14 weeks could improve the general health status of several organs targeted by oxidative stress during diabetes and suggested that the supplement may be used in the management the complications of diabetes such as cardiovascular disease, neurological disease and other conditions worsened by overt inflammation and oxidative stress(6).

Taken altogether, unripe, fermented papaya and its' leaves may be effective in diabetic management  through controlling the levels of glucose and  reduced risk of complications.

Some Western researchers insisted that large sample size and multi center studies are necessary to validate its effectiveness by identifying the ingredients which are comparable to recently pharmaceutical medicine in use because geography, environment, time of harvest, etc. may influence the concentration of the food cultivation.
 In fact, herbalists have longly acknowledged that the external factors (mentioned above) may alter the quality of the herbs and foods by classifying these difference either through price or formula differentiation. In deed, the effectiveness with little or no adverse side effects of the formula is not the concentration of individual herb and a herb itself but the interaction of all ingredients in a herb and herbs in the same formula. Extracting only one ingredient of the herb for treatment of certain diseases may be effective but enhanced complicative consequences. As always, all articles written by Kyle J. Sun-dried tomato Brushetta

The addition od sundried tomato makes ordinary bruschetta extraordinary. There is no shortage of favor intensity here  - garlic, green onion, fresh basil and 2 types of tomato pack a lot of punch.
Chopped seeded Roman (plum) tomato 2 cups 500mL
Sun-dried tomatoes in oil, chopped   1/2 cup  125mL
Finely shredded basil  1/4 cup  60mL
Sliced green onion    2tbsp. 30mL
Oil from sun-dried tomatoes  1tbsp.  15 mL
Red wine vinegar 2 tsp. 10mL
Garlic clove, minced ( or 1/4tsp., 1mL powder)  1   1
salt sprinkle
Pepper sprinkle
Baquette bread slices (1/2 inch, 12cm, thick)
Combine first 9 ingredients in medium bowl. Let stand for 30 minutes to blend flavors.
Arrange bread slices on ungreased baking sheet. Broil on top rack in oven for about 1 minutes per side until golden. Spoon tomato mixture over top. Serve immediately. Makes 32 Bruschetta.

Leek and bacon fried rice


Recipe attributed to 125 best  Chinese recipes by Bill Jones and Stephen Wong, published by Robert Rose.

4 strips bacon or pancetta  4, finely chopped
1 large whole leek, white and green parts separate and finely chopped   1
3 cups cook rice  750mL
1tbsp. chicken stock  15mL
Salt and pepper to taste
1. heat a non stick wok or skillet over medium heat. Add bacon and fry until golden and just beginning to turn brown, about 2 minutes. Add white part of leeks and stir fry until wilted and fragrant about 1 minute. Add green part of leek and sir to mix thoroughly.
2. Add rice to mixture; stir-fry until well combined and the grain are separated, about 2 minutes. Add chicken stock; cook, stirring for 1 minute or until the rice is heated through. (Add more stock if the rice appears too dry). Season with salt and pepper; stir to mix. Serve immediately. Serving 4.

The Stages of Endometriosis

During the last stage of the menstrual cycle, normally a layer of endometriosis lining on the inside of the uterus is expelled, known as menstruation blood, instead some of the endometriosis tissues grow somewhere in the body to cause endometriosis. Endometriosis also react to hormone signals of the monthly menstrual cycle, by building and breaking up tissues and eliminating them through menstrual period.
Endometriosis affects 
a) About 20% of reproductive age women with endometriosis present but without symptoms.
b) About 55% of women who have developed the new onset of severe menstrual cramps
c) About 25% of women with sub-fertility (less fertile than a normal couple), depending to the stages of endometriosis, according to the Clinical Center of Niš, the decreased fertilization rate in Stage I/II endometriosis might be a cause of subfertility in women, as a result of a hostile environment caused by the disease.
Since they grow in somewhere other than in the uterus, when they break there is no way for the period blood to exit causing blood attaching to the organs or lining of the abdomen resulting in scars or adheresion as well as weakening the normal function of organs.
Most of the time, the endometriosis tissues do not travel far. It is commonly found within the pelvic region, on the lining of peritoneum, in the ovaries, and on the surface of the uterus's outside wall, but they can be anywhere in the body such as well as fallopian tubes, the cervix, the vagina, and even the vulva.
Endometriosis can vary in appearance. It may be clear or white, reddish, brown or blue black, and cysts. They can be classified according to stage of severity(1):
a) Minimal stage:
Top surface, few in number. Commonly they are found in the inside wall of uterus, ligaments and ovary, causing a significant reduction in both progesterone and its ratio with 17 beta-oestradiol and luteal dysfunction and abnormal secretory patterns(3), in women with minimal stage endometriosis, of that may leads to unexplained causes of infertility(2). 



 b) Mild stage:
Deeper implants, greater numbers are presented. Commonly found in the same area as minimal stage, causing worsening of oocyte quality of women with mild stage of endometriosis of that may lead to infertility(4).

 c) Moderate stage:
Many implants, endometrial cysts present, affecting ovary function, causing scar tissues and adhesion is also present.
d) Severe stage:
Intensive peritoneal implants, large endometromas present and dense adhesion.
Each women experiences differently to endometriosis. Some women may have extensive endometrial tissues in their body but feel little or no pain at all, while other women may only be in the early stage of endometriosis but have excessive pain, according to the 1I Katedra i Klinika Ginekologii Onkologicznej i Ginekologii Uniwersytetu Medycznego w Lublinie, in the advanced stage of endometriosis, Increased peritoneal fluid ox-LDL levels observed in women with advanced-stage endometriosis suggest the important role of oxidative stress in the pathogenesis of the disease(5). The University of California-San Francisco (UCSF),  suggested that genetic microRNA 21 (MIR21) and DICER1 transcripts may play important roles for microRNAs (miRNAs) in the pathogenesis of severe versus mild endometriosis, potentially through regulation of gene silencing and epigenetic mechanisms(6).

Steam rice with grainy mustard and orange peel

2 cups long-grain rice  500mL
31/2 cups stock or water  875mL
1tsp. salt  5mL
2tbsp. grainy mustard  25mL
1 orange, juice and chopped zest
1. In a pot with a tight-fitting pod, combine rice, stock or water, salt, mustard, orange juice and zest. bring to boil; cook, uncovered, stirring occasionally.
2 Cover pot tightly. Reduce heat to low and cook for 15 minutes. Remove from heat and let sit, with lid on for an additional 10 minutes.
Serve 4- 6.

The best of home made Artichoke Salami Pizzettes

Full sized pizzas are so old fashioned. These cute little mini pizzas make a bold flavor statement and a chic addition to any appetizer tray.
Basil pesto  1/4 cup  60mL
Unbaked pizza crust (12inch, 30cm diameter)  1    1
Grated Italian cheese blend 1/2 cup  125mL
Finely chopped marinated artichoke hearts  1/4 cup  60mL
Finely chopped salami (Such as Genoa)  1/4 cup  60mL
Finely chopped sun-dried tomatoes in oil 1/4 cup  60mL
Spread pesto on pizza crust. Cut out circle with 2 inch (5cm) round cookie cutter. Arrange on greased baking sheet with sides. Discard remaining pizza crust scraps.
Combine remaining 4 ingredients in a small bowl. Spoon bout 2 tsp. (10mL) onto pizza crust rounds. Bake in 400 degree F (205 degree C) oven for about 12 minutes until cheese is melted and golden. Make about 22 pizzettes.
