Leek and bacon fried rice
Recipe attributed to 125 best Chinese recipes by Bill Jones and Stephen Wong, published by Robert Rose.
4 strips bacon or pancetta 4, finely chopped
1 large whole leek, white and green parts separate and finely chopped 1
3 cups cook rice 750mL
1tbsp. chicken stock 15mL
Salt and pepper to taste
1. heat a non stick wok or skillet over medium heat. Add bacon and fry until golden and just beginning to turn brown, about 2 minutes. Add white part of leeks and stir fry until wilted and fragrant about 1 minute. Add green part of leek and sir to mix thoroughly.
2. Add rice to mixture; stir-fry until well combined and the grain are separated, about 2 minutes. Add chicken stock; cook, stirring for 1 minute or until the rice is heated through. (Add more stock if the rice appears too dry). Season with salt and pepper; stir to mix. Serve immediately. Serving 4.

The Stages of Endometriosis

During the last stage of the menstrual cycle, normally a layer of endometriosis lining on the inside of the uterus is expelled, known as menstruation blood, instead some of the endometriosis tissues grow somewhere in the body to cause endometriosis. Endometriosis also react to hormone signals of the monthly menstrual cycle, by building and breaking up tissues and eliminating them through menstrual period.
Endometriosis affects
a) About 20% of reproductive age women with endometriosis present but without symptoms.
b) About 55% of women who have developed the new onset of severe menstrual cramps
c) About 25% of women with sub-fertility (less fertile than a normal couple), depending to the stages of endometriosis, according to the Clinical Center of Niš, the decreased fertilization rate in Stage I/II endometriosis might be a cause of subfertility in women, as a result of a hostile environment caused by the disease.
Since they grow in somewhere other than in the uterus, when they break there is no way for the period blood to exit causing blood attaching to the organs or lining of the abdomen resulting in scars or adheresion as well as weakening the normal function of organs.
Most of the time, the endometriosis tissues do not travel far. It is commonly found within the pelvic region, on the lining of peritoneum, in the ovaries, and on the surface of the uterus's outside wall, but they can be anywhere in the body such as well as fallopian tubes, the cervix, the vagina, and even the vulva.
Endometriosis can vary in appearance. It may be clear or white, reddish, brown or blue black, and cysts. They can be classified according to stage of severity(1):
a) Minimal stage:
Top surface, few in number. Commonly they are found in the inside wall of uterus, ligaments and ovary, causing a significant reduction in both progesterone and its ratio with 17 beta-oestradiol and luteal dysfunction and abnormal secretory patterns(3), in women with minimal stage endometriosis, of that may leads to unexplained causes of infertility(2).
b) Mild stage:
Deeper implants, greater numbers are presented. Commonly found in the same area as minimal stage, causing worsening of oocyte quality of women with mild stage of endometriosis of that may lead to infertility(4).
c) Moderate stage:
Many implants, endometrial cysts present, affecting ovary function, causing scar tissues and adhesion is also present.
d) Severe stage:
Intensive peritoneal implants, large endometromas present and dense adhesion.
Each women experiences differently to endometriosis. 2 cups long-grain rice 500mL
31/2 cups stock or water 875mL
1tsp. salt 5mL
2tbsp. grainy mustard 25mL
1 orange, juice and chopped zest
1. In a pot with a tight-fitting pod, combine rice, stock or water, salt, mustard, orange juice and zest. bring to boil; cook, uncovered, stirring occasionally.
2 Cover pot tightly. Reduce heat to low and cook for 15 minutes. Remove from heat and let sit, with lid on for an additional 10 minutes.
Serve 4- 6.

The best of home made Artichoke Salami Pizzettes

Full sized pizzas are so old fashioned. These cute little mini pizzas make a bold flavor statement and a chic addition to any appetizer tray.
Basil pesto 1/4 cup 60mL
Unbaked pizza crust (12inch, 30cm diameter) 1 1
Grated Italian cheese blend 1/2 cup 125mL
Finely chopped marinated artichoke hearts 1/4 cup 60mL
Finely chopped salami (Such as Genoa) 1/4 cup 60mL
Finely chopped sun-dried tomatoes in oil 1/4 cup 60mL
Spread pesto on pizza crust. Cut out circle with 2 inch (5cm) round cookie cutter. Arrange on greased baking sheet with sides. Discard remaining pizza crust scraps.
Combine remaining 4 ingredients in a small bowl. Spoon bout 2 tsp. (10mL) onto pizza crust rounds. Bake in 400 degree F (205 degree C) oven for about 12 minutes until cheese is melted and golden. Make about 22 pizzettes.

Apricot and Plum, the Future of Organic Oral Hygiene

People with problem of oral hygiene may consider to add Apricot and Plum into their diet, new study suggested. In fact, the foods not contain measurable amount of nutrients which are important to
maintain the proper growth and body functions, but also enhance the immune system in fighting against invasion of foreign substances, including bacterial and viral agents.
Patients with oral hygiene incompetence may be experience certain dental consequences such as gums diseases including cavities or even tooth loss.
According to the study by the University of Karachi, butanolic extract from Prunus armeniaca exhibited antibacterial activity against both Gram positive and Gram negative bacteria(1).
Mei, other member of the Prunus armeniaca, a favorite snack of Asian women, especially for those in the early stage of pregnancy, probably due to its sour taste, is also found to improve oral hygiene. According to the study of the University of Hong Kong, in the differentiation of the anti bacterial effectiveness of 20 traditional Chinese herbs. Mei was found to exert a significant effect against all testing oral bacteria, namely, Streptococcus mitis, Streptococcus sanguis, Streptococcus mutans and Porphyromonas gingivalis(3).
Organic acids, the main ingredient of fructus mume extract, also showed a strong evidence in enhancing oral hygiene through its antimicrobial effect on orthodontic bracket in vitro by increasing the amount of dead bacteria on the surface(4).
Mei or Lu E Mei is also known as Plum. The sour and warm herb has been used in TCM to treat diarrhea, pain from colic caused by ascaris, alleviates thirst, as well as other digestive system diseases caused by imbalance of bacteria. According to the the University of Hong Kong, at suspension of 2 g/mL the extract showed a significantly inhibited effect on all tested oral pathogenic bacteria and may be considered as a potential anti- oral antimicrobial agent to control or prevent dental diseases(5).
Unfortunately, accompanied to their health effects, Mei can not be used in case of internal heat excess such as high fever with infection or cold or flu without sweat)(6) and sulfite sensitive People should not consume fried apricot because sulfur- compounds are often added to dried foods as preservatives for prevention of oxidation, according to traditional Chinese medicine.(7).

Spicy sausage starter

Some like it hot and if you do, this recipe will be love at first bite. Hot Italian sausage adds a spicy punch to this other wise unassuming topping for sliced baguette
Cooking oil 1tsp. 5mL
Hot Italian sausage 1lb. 454g
Sliced red pepper 11/2 cups 375 mL
Sliced onion 1 cup 250mL
Garlic cloves, sliced 2 2 Chopped fresh oregano (1/2tsp. 2mL. dried) 2tsp. 10mL
Baguette 1 1
Heat cooking oil in large frying pan on medium. Add sausage. Cook for about 10 minutes, turning occasionally, until browned. Remove to cutting board. Cut into 1/2 inch (12mm) thick slices.
Add next 3 ingredients and sausage slices to same frying pan. Cook for about 8 minutes, stir occasionally, until onion is softened and sausage is no longer pink.
Add oregano. Stir with bread slice. Serve 8.

Cooking oil 1tsp. 5mL
Hot Italian sausage 1lb. 454g
Sliced red pepper 11/2 cups 375 mL
Sliced onion 1 cup 250mL
Garlic cloves, sliced 2 2 Chopped fresh oregano (1/2tsp. 2mL. dried) 2tsp. 10mL
Baguette 1 1
Heat cooking oil in large frying pan on medium. Add sausage. Cook for about 10 minutes, turning occasionally, until browned. Remove to cutting board. Cut into 1/2 inch (12mm) thick slices.
Add next 3 ingredients and sausage slices to same frying pan. Cook for about 8 minutes, stir occasionally, until onion is softened and sausage is no longer pink.
Add oregano. Stir with bread slice. Serve 8.

Chicken and egg fried rice
Recipe attributed to 125 best Chinese recipes by Bill Jones and Stephen Wong, published by Robert Rose
11/2 tbsp. vegetable oil 20mL
3 eggs, beaten 3
Salt and pepper to taste
1 tbsp. minced ginger root 15 mL
2 green onion, finely chopped 2
2 cups diced cooked chicken meat 500mL
2 tbsp. chicken stock 25mL
1/2 cup frozen peas 125mL
1/2 cup can corn kernel 125 mL
3 cups cooked rice
Salt and pepper to taste
1. In a non-stick wok or skillet, heat 1/2 tbsp. (7mL) oil over medium heat. Add eggs; cook to make a thin omelet by swirling the pan so eggs flow onto as large a surface as possible. Season lightly with salt and pepper. Remove, chop coarsely and set aside
2. Heat remaining oil in wok over medium heat. Add ginger root and onion; fry until fragrant. about 30 seconds. Add chicken, chicken stock, pepper, peas and corn; stir 2 minutes. Add eggs and store to mix well. Season with salt and pepper; stir to mix. Serve immediately. Serve 4.
