1 pound extra lean beef
3 eggs, slightly beaten
3/4 cup bread crumbs
5 tablespoon tomato paste
Preheat the oven to 350 degree F. line a loaf pan with parchment paper.
Mix beef, eggs, bread crumbs and 4 tablespoon od tomato paste together
and place in the loaf pan. Spread remaining 1 tablespoon of tomato paste
on top of the meat loaf. Bake for 50 minutes or until lightly browned
on top.
optional: For more zing, add 1 teaspoon curry powder. To get your 5 -
vegetable quota for the day, add shredded carrots, diced sweet potato,
diced mushrooms, peas, and corn to the mix before baking.
