Simple & easy raw recipe: Pineapple Jicama salad

Raw food, volume 2, Healthy, delicious vegetarian cuisine made with living foods  by Lisa Montgomery, editor, hatherleigh

Prep. 11 minutes
1 cup pineapple. chunks
1 cup jicama, peeled and cubed
1 cup cucumber, cut into chunks
1/2 cut raw honey
2 tbsp. fresh mint, finely minced
Combined the above ingredients in a mixing bowl. Serve and eat.
