A dressing as bold as this one needs, salad green that can stand up to
its assertiveness. Try it on a mix of chopped arugula, radicchio, and
endive the classic tricolor salad. Halve the recipe for small batch,
suitable for 6 serving
1/2 cup ( 2 ounces) crumbled blue cheese
1/2 cup plain fat free yogurt
2 tsp. light mayonnaise
Combine all ingredients in a small bowl. Sore and covered in refrigerator for up to 4 days. Yield 3/4 cup. Serving size: 1 tsp.
